Poblanos are mildly hot, somewhat earthy in taste.  Excellent for stuffed peppers!

Allowed to be on the vine until red and almost ripe, they are ready for drying as Ancho Chile peppers. 

Storage and Tips

Optimal Storage: Cool (45-50F) and humid (90% RH) will keep Peppers for 2-3 weeks. Typical refrigerators are too cold and dry for long storage.

Similar to Tomatoes, Peppers can continue to ripen and change color after harvest. Room temperature will speed this process as will storing near fruits emitting ethylene gas (e.g. a ripe banana, apple, or tomato).
