Generally slightly sweeter and thinner-walled than their same-colored bell pepper counterparts.  Tom's favorite for omelets and frying.  Also try roasting them, delicious!

Storage and Tips

Optimal Storage: Cool (45-50F) and humid (90% RH) will keep Peppers for 2-3 weeks. Typical refrigerators are too cold and dry for long storage.

Similar to Tomatoes, Peppers can continue to ripen and change color after harvest. Room temperature will speed this process as will storing near fruits emitting ethylene gas (e.g. a ripe banana, apple, or tomato).
