Typically the most mild of the chili peppers, slightly sweet and tangy.  Excellent on pizzas and pickled.

Banana peppers and Pepperoncini are quite similar and are often substituted for each other.  On average, Banana peppers might have just a touch more sweetness.

Storage and Tips

Optimal Storage: Cool (45-50F) and humid (90% RH) will keep Peppers for 2-3 weeks. Typical refrigerators are too cold and dry for long storage.

Similar to Tomatoes, Peppers can continue to ripen and change color after harvest. Room temperature will speed this process as will storing near fruits emitting ethylene gas (e.g. a ripe banana, apple, or tomato).
