These excellent keepers can be enjoyed fresh from the garden or many months into storage.  They typically develop a fuller, more pungent flavor than the fresh to short-term storage varieties.

Blush (pink/purple):
Brownish-pink skin and light purple rings.  A little sweeter and milder than most storage onions, it adds a delicate flavor to soups, stews and other recipes. (ETA 9/10)

Red:  Excellent cooking onion, contributes an abundance of sweetness and pungency to any cuisine

Yellow:  Blocky bulbs with dark yellow skin, delectable raw or cooked

Storage and Tips

Optimal Storage: Cool (34-55F), dark, and dry

It Sprouted - An Onion that has sprouted in storage is perfectly fine to eat, provided it has remained firm and there are no signs of mold or decomposition.

Too Strong - Soak sliced onions in cold water for up to 10 minutes to reduce the naturally occurring sulfur compounds that give onions their sharp, pungent taste and smell. This will allow more of the sweet flavor to shine through.
