Kohlrabi

Purple Kohlrabi's flesh color and taste are very similar to the green.

Both are crisp, slightly sweet with a very mild broccoli/cabbage taste.  Peeled and cubed or shredded Kohlrabi is a great addition to salads!  A versatile vegetable, it is also good roasted, sliced and sautéed in butter, or in soups.

Low carbs.  High in fiber, vitamin C, calcium, and magnesium.  Also a good source of B6 and potassium.
